rich & decadent rocky road; dark chocolate, crunchy biscuits & gooey marshmallows encased in a milk chocolate topping – a match made in heaven 💖 by @megsbakesncakes
-Add 400g @bakewithstork butter, 200g
@droetkerbakingireland dark chocolate and 8tbsp @lylesgoldensyrup golden syrup to a Pyrex bowl
-Place in the microwave and heat on 30 second blasts, stirring after each one, until a smooth chocolate mixture is formed
-In a large bowl, crush around 1kg of biscuits – I had a mixture of @mcvities_ire digestives and rich teas, @aldi_ireland Oaties with some @lotusbiscoffuk biscuits added for good measure
– Add 200g marshmallows (I used @freedomconfectionery) and stir until combined
-Add the melted chocolate and quickly stir to coat all of the biscuits
-Transfer to a lined square tin and press down to flatten
-Refrigerate for at least 2 hours or overnight
-Melt 200g of chocolate and spread overtop to coat before leaving to set for another hour
Slice (with a proper big knife) & enjoy – chocolatey, gooey goodness 💖
