S’mores Cookies

”I created this recipe with gifted ingredients from the lovely team at Freedom mallows. Their mallows are all gluten free and vegan too.

I also used some chocolate chips too for extra goodness.

Here’s what you’ll need;
– 120g GF self raising flour
– A pinch of xanthan gum
– 50g golden caster sugar
– 50g soft brown sugar
– 40g butter
– 1/2 tsp golden syrup
– 1/2 tsp vanilla extract
– 1/2 tsp bicarbonate of soda
– 1 tbsp water
– 40g mini pink and white vanilla marshmallows from
– 40g chocolate chips (Gifted)
– 8 extra chocolate chips (for topping)

Preheat the oven to 160 and line two baking trays with grease proof paper.

In a bowl mix the flour, xanthan gum and both sugars. Add in the chopped butter and rub together with your fingers until it all looks like breadcrumbs.

Add in the golden syrup, vanilla extract, bicarbonate of soda and water. Mix until it all comes together in a ball. (you may need to add more water if it’s not coming together into a ball)

Gently stir in the marshmallows and chocolate chips until spread evenly across the dough.

Form around eight individuals balls of the dough and spread out across the two baking sheets. Ensure to leave plenty of space in between each one as they will spread in the oven. (If you’d like to make sure each cookie is the same size you can weigh out each ball as you create it, I did this and created each ball with 35g of dough)

Bake in the oven for 15 minutes. Remove from the oven and immediately top each cookie with one extra chocolate chip. Allow to cool completely on the tray before digging in”
