S’mores Millionaire Shortbreads made by @megsmakesnbakes 👩🏽‍🍳

Homemade caramel topped with marshmallow and chocolate shell on a laver of crumbly shortbread biscuit 🍪

For the shortbread:
-Rub 175g @bakewithstork butter into 225g
@odlums_ ireland plain flour until a crumb like texture is achieved
-Stir in 75 g @gembakes.ie sugar
-Transfer to lined baking tray ~ 33×23cm, press down until smooth and firm and bake at 150C for 30 mins
For the caramel:
-Combine 1 tin @droetkerbakingireland condensed milk, 175g butter, 1 tbsp brown sugar and 75g
@lylesgoldensyrup in pan
-Stir over low heat until sugar is dissolved aBring to slow boil stirring continuously until thick and golden brown in colour
-Remove from heat and pour over cooled biscuit base before refrigerating until cool and set

For the marshmallow:
- Melt 100g @freedomconfectionery (#gifted) white marshmallows with 1 tbsp honey
- Spoon over cooled caramel and refrigerate until set

For the chocolate:
-Melt 400g @cadburyireland milk chocolate with 1 tsp oil
-Cover the set marshmallow in the milk chocolate and allow to set in fridge before cutting

“I nearly had a disaster today! I had just prepared the cookie dough (peanut butter and oat - delicious!) when I went to get the marshmallows which were kindly #gifted by @freedommallows and found they were no longer where I had left them! Cue frantic searching, questioning of 12 year old who swore blind he hadn’t even seen them, @ more searching and then thought to look under the table where my son was sitting. There they were! Or at least used to be! Two empty packets and a half eaten packet of the new chocolate covered vanilla mallows! At least there were some left to put in the cookies but I can’t say I was very happy with that young man today!! However it does show you how delicious those marshmallows are!!.”

An ‘EVERYTHING’ Rocky Road🤌🏽

For when you literally want to throw everything into a bowl and end up with a dessert at the end, then this mixed bag rocky road is for you!

Here is @adatewithsam recipe however you can customise to whatever you like🥨

Ingredients
• 1/4 cup chopped hazelnuts
• 200g dark chocolate
• 1/4 cup @pana_organic hazelnut spread
• 2 TBS coconut oil
• 1 scoop @macrOmike chocolate hazelnut protein
• 1/4 cup chopped pistachios
• Handful vegan marshmallows
• 15g freeze dried raspberries
• Handful of fruity vegan jellies
• 1 chopped @macrOmike game changer bar

Method:
1. Melt the chocolate, hazelnut spread and coconut oil in a saucepan on a low heat until fully melted.

2. Remove from heat and add all the remaining ingredients.
Mix until everything is coated fully in chocolate.

3. Pour into a small loaf tin lined with baking paper and set in the fridge to harden for 2 hours. Mine was approximately half the loaf tin and I made 4-5 bars!

4. Enjoy your chocolate fingers!!
