Mallows Chocolate Cookies
130g softened butter
2 tbsp golden syrup
1 tsp vanilla extract
160g caster sugar
1 medium egg
235g plain flour
1 tsp baking powder
20g cocoa powder
100g mini mallows
50g chocolate chips
Preheat the oven to 200c (180c fan).
Line 3 baking trays with parchment paper.
Beat together the butter, sugar, golden syrup and vanilla extract until fluffy.
Beat in the egg until well combined. Add the flour, cocoa powder and baking powder and mix well.
Add mini mallows and chocolate chips and mix again.
Make into 12 balls and place on baking trays leaving 2-3 in as they will spread. Bake for 10 minutes. Let them sit for 10 mins on the tray then transfer to a wire rack to cool completely.
