Ingredients
• 380g White Chocolate (I used @asda Free From brand)
• 50 g @floraplantbased unsalted Butter
• 125 g @lotusbiscoffuk Spread
• 150 g @freedommallows Marshmallows
• 200 g Biscoff Biscuits (chopped)
• 50g Party Ring biscuits (chopped)
To decorate
• Biscoff Spread
• Biscoff Biscuits
Instructions
1. Line a 9″ Square tin with baking paper.
2. In a Large bowl, add chocolate and butter – melt on a low heat heat, or in the Microwave on short bursts until fully melted – stir till smooth.
3. Separately, melt the Biscoff Spread in the microwave for 30 seconds or so or until runny, beat into the melted white chocolate mix.
4. Once melted and combined, add marshmallows and chopped biscuits and fold together – pour into tin and spread/press down til even.
5. Press a few extra party rings, marshmallows and broken biscoff biscuits into the top of the rocky road. Melt a little extra Biscoff spread and drizzle over the top, and refrigerate until set.
