Giant Christmas tree cookies

Are you looking for a larger than life cookie with all the flavours of Christmas?

We’ve got you covered! These gingerbread Christmas trees are packed with spice and jewelled with pretty gummy lights!

The recipe makes two cookies, so wrap one in cellophane and tie with ribbon for a festive gift and share the other with someone special over a cuppa.

Incredibly easy to make and we’ve even included a template for you to print off and cut out… the kids are going to love it!

Ingredients

300g plain flour

1 tsp bicarbonate of soda

60g soft brown sugar

3 tbsp golden syrup

1 small egg

3 tsp ground ginger

¼ tsp ground cloves

½ tsp ground allspice

Extra flour for dusting and rolling

Method

Preheat oven to 180c

Place butter, sugar, spices and syrup in a small saucepan, gently heat to dissolve butter and crystals in the sugar. (don’t boil!) Allow to cool for 10 minutes.

Add flour, bicarb and egg to a large bowl and add the syrupy mixture.

Mix really well into a soft dough.

Tip out the dough onto a large piece of clingfilm, wrap well and chill for an hour. (this will firm up the dough)

Now divide the dough into 2 equal pieces, and roll out just big enough to fit your Christmas tree template. Carefully place the template over the dough and using a sharp knife cut out.

Transfer your cookie to a large baking sheet lined with baking parchment.

Repeat with the second piece of dough.

Place both cookies in the oven for 12-15 minutes.

Allow to cool on the baking sheet for 10 minutes before transferring to a wire rack to cool thoroughly.

You should have a some scraps of dough left, get creative, don’t waste them! They’ll still taste delicious. (chefs perks!)

Now your giant cookies are cool mix 10 heaped tsp of icing sugar with 4 tsp of egg white and thoroughly mix to a smooth paste.

(Egg white dries to a harder more substantial icing if you want to send as gifts)
