Fully Loaded Biscuit Gnawbles Rocky Road!

Natasha (@glutenfreegelder)  has created a Top 14 allergen free rocky road recipe, using our vegan mini marshmallows, vegan digestives, chocolate, and Gnawbles!

Ingredients

  • 230g Dairy Free Chocolate
  • 160g ‘free from’ digestive biscuits
  • 130g dairy free butter
  • 75g vegan mini marshmallows
  • 4 tbsp golden syrup
  • 3 x packets Creative Nature Gnawbles
  • 1 handful dairy free chocolate chips (optional)

Prep:10 minutes

Cook:60 minutes (to set)

Method

  • Tip the biscuits into a large mixing bowl and use a rolling pin, (or the bottom of a mug), to crush them into small pieces
  • Empty two packets of the Creative Nature Gnawbles into the bowl and add 50g of mini marshmallows (nearly one bag).
  • Break up the chocolate and place 150g into a bowl along with 100g dairy free butter and three tablespoons of golden syrup. Place the bowl in a sauce pan with an inch of water in the bottom and boil over a low heat until the contents melt together
  • Once a smooth liquid has formed pour it into the bowl containing the biscuits and mix well, ensuring everything is completely covered
  • Place a sheet of parchment paper in a baking tray and pour in the contents of the bowl, push the mixture into all four corners of the tin and use the back of a large spoon or spatula to pack the mixture down tightly. Smooth the top down so the tray is the same thickness all over and place in the fridge to set for thirty minutes
  • In the meantime add the remaining chocolate, butter and golden syrup to a bowl and repeat the melting process by placing the bowl in a saucepan with an inch of water in the bottom and boiling over a low heat
  • Once the liquid has melted and no lumps remain, pour it over the rocky road tray and use the back of a spoon to spread it evenly over the top
  • Cut the Gnawbles in the remaining bag in half and sprinkle across the top of the rocky road along with the left over mini marshmallows and the dairy free chocolate chips if you chose to use them
  • Return to the fridge to set for another half an hour!
