Fluffy mallowy coconut snowballs
Crispy yet fluffy, these Vegan coconutty little balls are filled with ooey-gooey melt in the mouth giant mallows. Make them small and crisp or big and chewy. Best of all they only require 4 ingredients and take less than 10 minutes to make!
For some festive twinkle, dust with icing sugar and a sprinkle of magical edible glitter.
Ingredients
4 Tbsp Aquafaba
½ tsp cream of tartar
100g golden caster sugar
150-200g desiccated coconut
Optional icing sugar and edible glitter for dusting.
Makes 8-10 snowballs
Method
Pre heat the oven to 180c
Whisk up the aquafaba to soft peaks, add cream of tartar then 1 tbsp golden caster sugar at a time until all the sugar is incorporated and you have pillowy firm peaks.
Fold in enough coconut to create a soft but firm dough that will hold its shape.
Take a vegantic mallow, cut in half and encase in a good layer of coconut mixture and lay golf ball sized snowballs on a baking tray lined with a non-stick baking sheet or silpat.
Now bake in a preheated oven at 180c for 10-12 minutes.
Remove and cool on a wire rack.
Enjoy dunked in a cosy hot chocolate!
